Everyone knows a good potato salad is essential to any summer gathering! There’s something about the combination of flavors that makes it a classic staple that every guest looks forward to. That’s why we’ve partnered with the California Milk Advisory Board to bring you a fresh take on typical potato salad! We love baked potatoes and all of the delicious toppings that come along with them, so we decided to create a delicious layered baked potato salad! It’s the perfect way to dress up this simple side dish! Read on to see how we made it…

Layered Baked Potato Salad

Serves 8-10

Ingredients

  • 3 lbs red potatoes, scrubbed and diced
  • 4 tbsp Real California butter, melted
  • 3 tsp garlic powder
  • salt and pepper, to taste
  • 2-3 cups Real California sour cream
  • 2 lbs bacon, cooked and chopped
  • 3-4 cups shredded Real California cheddar cheese
  • 3 bunches green onions, chopped

Directions

Preheat the oven to 400 degrees F. On a large baking sheet, mix together the potatoes, butter, garlic powder, salt and pepper. Roast for 25 minutes, flipping halfway through.

In a glass bowl, layer the potatoes and the remaining ingredients.
