Happy Monday! Today for Cupcake Monday, my lovely friend, Jill from Modern Cupcake is sharing her Peppermint Cream Cheese frosting recipe (as seen in The Party Dress magazine). Before we jump to her recipe, I just want to introduce you to Jill. She is an amazing baker, interior designer and has an incredible eye for style. Lucky for me, we live a few miles apart. Her red velvet cupcakes are beyond delicious. Jill recently started a lifestyle blog filled with all things that inspire her, not just baking and I’m loving it. I think you will, too. Peppermint Cream Cheese Frosting by Modern Cupcake
3 cups sifted powdered sugar
1/2 cup crushed peppermint candy
1/4 cup unsalted butter at room temperature
3 oz. cream cheese at room temperature
6 – 8 tsp. milk
With an electric mixer, cream butter and cream cheese. Add powdered sugar, one cup at a time. Incorporate milk as needed. Mix until light and fluffy. Fold in crushed peppermint candy. Frost dessert and top with crushed peppermint.

Delicious! The crushed peppermint candy is a lovely touch.
I’m definitely going to try this icing. There is also a new product by Andes candy with peppermint chunks that would work lovely as well.

I made this, it’s a very good recipe. I didn’t have candies on hand so I used peppermint extract.
How much frosting is this recipe supposed to make? Enough for 12 cupcakes or what? I couldn’t find where it says…
