Bark candy is one of my favorites because there are so many varieties, and let’s face it, chocolate goes with everything. I particularly like chocolate with my trail mix. Adding chocolate to sweet, chewy dried fruit and an assortment of wholesome nuts is like eating candy, so I figured why not make it into candy. I hope you’ll enjoy this semi-healthy treat. It’s a great one to begin the New Year.
Trail Mix Bark Candy
Serves 6-8
Ingredients
12-ounce bag semi-sweet chocolate
1 cup favorite trail mix
(The trail mix pictured above includes cranberries, golden berries, blueberries, pomegranates, almonds, walnuts and pistachios.)
Directions
Place the chocolate in a microwave-safe bowl and heat for 30 seconds at a time, stirring in between until completely melted. Pour the chocolate over a parchment lined baking sheet, and use a spatula to spread evenly to about a 1/4″ thickness. Sprinkle the trail mix over the chocolate and allow the candy to set in the refrigerator for 1 hour before breaking into pieces to enjoy.
