3 Cupcake Recipes Perfect for Fall…

The anticipation of the holidays is here and to me, that means more family time, holiday decorating and baking delicious sweets! The cooler weather encourages us to stay in, get cozy and warm up with hot coffee and yummy treats. We have partnered with Coffee-Mate™, our favorite coffee creamer, to bring you 3 amazing (and easy) cupcake recipes that feature their seasonal flavors. So choose a favorite recipe (I love them all!), pick up some delicious Coffee-Mate™ (Pumpkin Spice, Tollhouse Chocolate Chip Cookie + Tollhouse Snickerdoodle) and get baking!

Double Chocolate Chip Cupcakes with Cookie Dough Frosting

Cupcakes

1 Devil’s Food Cake Mix
1 large box chocolate pudding
Mini semi-sweet chocolate chips

Prepare as directed, but add 1 large box of chocolate pudding to the mix plus one additional egg.

Fold in half a bag of mini semi-sweet chocolate chips

Bake as directed on package.

Frosting

¾ cup brown sugar
½ cup butter
1 1/4 cup flour
1 tsp. vanilla
½ tsp. salt
¼ – ½ cup Coffee-mate® Nestle® Toll House ™ Chocolate Chip Cookie flavored creamer

Mini Chocolate chips (about half a bag)

Cream brown sugar, vanilla and butter together. Add flour and salt, mix well. Add ¼ cup creamer and continue to add more to the consistency you desire. Fold in mini chocolate chips!

Pumpkin Spice Cupcakes with Cream Cheese Frosting

Pumpkin Spice Cupcakes

1 Spice Cake mix
1 Cup pureed pumpkin (canned pumpkin not pie filling)
1 Cup Coffee-mate® Pumpkin Spice flavored creamer

Prepare cake mix per directions but eliminate the oil and the water. Add the pumpkin and creamer and beat for two minutes at medium speed.

Bake as directed.

Cream Cheese Frosting

12 oz softened cream cheese
¾ cup softened  butter
½ tsp. vanilla
4-5 cups powdered sugar
¼ – ½ cup Coffee-mate® Pumpkin Spice flavored creamer (Begin with ¼ cup and add more as needed)

Beat Cream cheese until fluffy then add butter and vanilla and beat until fluffy. Slowly add powdered sugar and beat. Add creamer until frosting is the right consistency.

Snickerdoodle Cupcakes with Snickerdoodle Frosting

Snickerdoodle Cupcakes

1 White Cake Mix
1 Cup Coffee-mate® Nestle® Toll House ™ Snickerdoodle flavored creamer
¾ tsp cinnamon

Prepare Mix according to directions but eliminate water and add creamer and cinnamon, mix for 2 minutes on medium speed.

Bake as directed on package.

Snickerdoodle Frosting

1 Cup Shortening
4 cups powdered sugar
1 tsp. vanilla
¼ tsp. salt
1/3 cup Coffee-mate® Nestle® Toll House ™ Snickerdoodle flavored creamer
½ tsp. Cinnamon

Beat Shortening until fluffy then add vanilla, salt, cinnamon and creamer. Add powdered sugar and beat until fluffy.

    I interpreted the recipe for the frosting for the Double Chocolate Chip Cupcakes to use 1 1/4 cups of four. Should this be powdered sugar?
