Today we are sharing ideas for a simple and beautiful Easter lunch! With Easter right around the corner, we planned a gorgeous tablescape and delicious menu that you can easily recreate. Easter is the perfect day to gather all of your loved ones and enjoy each other’s company while enjoying a delicious meal! To create our menu, we partnered with Nestle’s Balance Your Plate, an educational program that helps consumers meet the Dietary Guidelines for Americans by providing simple meal planning ideas pairing frozen prepared foods and pizzas with fruits, vegetables, whole grains, and low-fat dairy. We started with a main entree that everyone loves… Stouffer’s Macaroni & Cheese! Stouffer’s Mac & Cheese uses real, simple ingredients like freshly made pasta, cheddar cheese, milk and butter. We rounded out the meal with delicious side dishes to help create a balanced and nutritious meal that the whole family will love! Read on for all of our tips + recipes for creating this beautiful Easter lunch!

Tip #2: Use greenery to decorate the space! It’s a great way to bring the outdoors inside! We placed greenery in the chandelier to create a unique focal point. You can find greenery stems from your local floral shop, grocery store or forage them from your own yard!
So easy, yet oh-so-pretty, right?
Tip #3: Make creative place cards by writing your guests’ names on hard-boiled eggs! Place them in cute mini twig baskets for a fun presentation!
Tip #4: A moss table runner ties in perfectly with the greenery in the chandelier, and is the perfect backdrop for our white tableware!
Tip #5: Serve Stouffer’s Macaroni & Cheese on the table in a pretty dish or bowl, or in smaller single serving dishes.
Tip #6: A fresh salad always makes a good side, especially when paired with a tasty homemade dressing!
Spring Peas and Radish Salad
Serves 6-8
Citrus Vinaigrette Ingredients
1/2 small shallot, finely chopped
2/3 cup extra virgin olive oil
1/4 cup white wine vinegar
1/2-inch piece of ginger, grated
juice of 2 lemons
juice of 1 orange
freshly ground salt and pepper, to taste
Salad Ingredients
1 head butter lettuce, stem removed
4 radishes, stems removed and sliced thinly
2 cups snow peas, sliced to expose peas
4 sprigs fresh mint, leaves only
2 tbsp green onions, chopped
Directions
Prepare the dressing by adding all the ingredients to a jar, sealing and shaking vigorously. Set aside.
On a platter, layer the lettuce and sprite evenly with the remaining ingredients.
Serve the salad with the dressing.
Tip #7: A tasty vegetable dish pairs perfectly with the rest of our Easter Lunch menu!
Garlic Roasted Brussels Sprouts
Serves 6-8
Ingredients
1 lb Brussels sprouts, stems removed and sliced in half
2 tbsp minced garlic
1 tbsp extra virgin olive oil
freshly ground salt and pepper, to taste
1 (8 oz) container sliced baby portobello mushrooms
sliced almonds, optional
Directions
Preheat the oven to 400 degrees F and line a baking sheet with foil.
Add the Brussels sprouts, garlic, extra virgin olive oil, salt and pepper to the pan and mix until everything is evenly coated. Roast in the oven for 20 minutes. Mix in the portobello mushrooms and roast for another 10 minutes.
Serve topped with sliced almonds, if you’d like.
Tip #8: Don’t forget to add your favorite protein dish to ensure a balanced plate and meal. We chose some delicious grilled chicken and oven baked turkey bacon!
